Lauki Ka Raita /Bottle Gourd Dip

A cool and refreshing bottle gourd and yoghurt dip.

INGREDIENTS:-
preparation time-10 min
cooking time-5 min
serve-4
  • Bottle gourd-250 gm (approx )
  • Yoghurt-2 cup
  • Salt-1/2 t.s
  • Chilli powder-1/2 t.s
  • Cumin seeds- 1/2 ts
  • Curry leaves -8
  • Oil-1 t.s
PROCEDURE;-
  1. Peel and grate the bottle gourd,remove the hard seeds .
  2. Pressure cook with 1 cup of water for 2 whistles or till cooked well and soft
  3. Open and let it cool down completely .this boiled bottle gourd can be refrigerated and used for up to 3 days.
  4. Whisk the curd ,add salt,chilli powder .add some water( in which bottle gourd is boiled.)
  5. Add the boiled gourd (approx 1.5 cup) and mix well.
  6. Heat 1 t.s oil in a small pan ,add cumin and curry leaves,switch off the heat and add a  pinch of chilli powder.
  7. Pour over the raita and chill before serving.
serving suggestions-serve as a side dish .

lauki ka raita. i had heard of it bt never made it so dont know how it tastes. ur pic makes it look wonderful. i have some lauki left would try it out just for me and see

i make this raita..but i have never given a curry leaves tadka..what a lovely flavour it would have...ver nice!

Since yogurt is very good for digestion I'm always looking for raita recipes. Lauki is also a very light and healthy vegetable, will definitely try this.
