Guvar Phali ki Subzi (Cluster Bean Stir Fry)

Stir fried Cluster bean curry /Guvar phali with yogurt and Indian spices

INGREDIENTS:-
  • Cluster beans /Guvar phali-250 gm
  • Green chillies-4
  • Ajwain(carom seeds)-1 tsp
  • Asafoetida-1/4 tsp
  • Yoghurt-3 tbls
  • Chilli powder-1.5 tsp
  • Turmeric -1/2 tsp
  • Mango powder-1 tsp
  • Coriander powder-1.5 tsp
  • Sugar-a pinch of
  • Salt-to taste
  • Oil-2 tbsp
PROCEDURE-
  1. Wash and destring the cluster beans/guvar and chop into medium size pieces.
  2. Pressure cook with 1 glass of water for 3 whistles.
  3. Open the cooker and drain the beans in a colander to drain off all the water,no need to press and squeeze the water from the beans.
  4. Take curd in a bowl and mix salt,sugar, chilli powder, coriander powder and mango powder.
  5. Heat oil in a pan,add asafoetida and ajwain ,fry till golden in colour 
  6. Add green chillies(chopped in big pieces) turmeric and boiled guvar phali, saute for 1 minute
  7. Add  the yoghurt mix, stir fry and let it cook on low heat for 2-3 minutes.keep stirring in between.
  8. Serve hot.
serving suggestions-serve as side dish with roti,daal aur rice

I usually make Poriyal(south indian style stir fry) with guvar beans, this stir fry sounds very interesting, i never tried with yogurt...will try yours next time!!

I think this is quite similar to what my mom makes by the look. I never asked her for her recipe.

I tried making guvarphalli sabji myself only once or twice, both times didn't come out good. So after all the pain in cutting the tiny beans and seeing how little the sabji turns out in the end, I gave up cooking guvarphalli again :P

Though if it's cooked correctly, the effort is sure worth it! So I'm bookmarking this one to try one last time :D
